Lean Ground Turkey and Ricotta Stuffed Bell Peppers


Serves: 4

Ready To Eat In: 1 Hr.

Wine Pairing: A Glass of Pino Noir


What You Will Need:

  • Two large, colorful bell peppers (slice in half hot dog style or lengthwise, cut top and seeds out)
  • 1 lb lean ground turkey
  • 2 T plus 1 t of EVOO
  • 1 shallot (chopped)
  • 4 cloves garlic (minced)
  • Salt & Pepper (to taste)
  • 1 t dried basil
  • 1 t dried oregano
  • 1 t garlic powder
  • 1 cup ricotta cheese
  • 1/3 cup freshly grated Parmesan 


Method:

  1. Preheat Oven for 400 F.
  2. In a medium-low heated skillet, heat EVOO. Add shallot and cook until translucent. Add garlic and cook for about 30 more seconds.
  3. Add ground turkey with spices. Cook until meat is browned all the way through. Drain. 
  4. In a medium sized bowl, mix together ground turkey and ricotta.
  5. Lightly rub EVOO on the bott
  6. Stuff mixture into peppers.
  7. Lightly rub flesh of peppers with EVOO so they don't stick to the pan. 
  8. Place stuffed peppers on/in a baking sheet/dish. 
  9. Sprinkle on the Parmesan and bake for another 5 min. to melt cheese.
