Wine Pairing: A Glass of Pino Noir
What You Will Need:
- Two large, colorful bell peppers (slice in half hot dog style or lengthwise, cut top and seeds out)
- 1 lb lean ground turkey
- 2 T plus 1 t of EVOO
- 1 shallot (chopped)
- 4 cloves garlic (minced)
- Salt & Pepper (to taste)
- 1 t dried basil
- 1 t dried oregano
- 1 t garlic powder
- 1 cup ricotta cheese
- 1/3 cup freshly grated Parmesan
Method:
- Preheat Oven for 400 F.
- In a medium-low heated skillet, heat EVOO. Add shallot and cook until translucent. Add garlic and cook for about 30 more seconds.
- Add ground turkey with spices. Cook until meat is browned all the way through. Drain.
- In a medium sized bowl, mix together ground turkey and ricotta.
- Lightly rub EVOO on the bott
- Stuff mixture into peppers.
- Lightly rub flesh of peppers with EVOO so they don't stick to the pan.
- Place stuffed peppers on/in a baking sheet/dish.
- Sprinkle on the Parmesan and bake for another 5 min. to melt cheese.
