Rustic Roasted Tomato Sauce


Serves: 4
Ready To Eat In: 45 Min.
Wine Pairing: Chardonnay

What You Will Need:

  • About 8 roma tomatoes, cut into chunks
  • 1 whole container of grape tomatoes, sliced in half
  • 4 cloves garlic, minced
  • 1 shallot, chopped
  • 2 T EVOO
  • S & P to taste (I always try to keep my salt intake to a minimum, so go easy!)
  • 2 t each of dried oregano and dried basil
  • Whole wheat angel hair pasta (or pasta of your choice!)
  • Fresh Parmesan cheese to top

Method:

  1. Preheat oven to 400 F.
  2. Toss all tomatoes, shallot and garlic in EVOO.
  3. Season with S & P, oregano and basil. 
  4. Put tomato mixture on/in a baking sheet/dish and roast for about 25-30 min. or until tender.
  5. While that's baking, bring water to a boil and cook the whole wheat pasta. 
  6. When tomato sauce is done roasting, you now have a choice as to how you serve it- 1) put the roasted goodness into a blender and blend into a sauce (as I did above) OR 2) serve as a chunky, roasted sauce over pasta. Either way is great!
  7. Grate on Parmesan cheese and serve!
