Honey Garlic Pork Chops with Roasted Rosemary Potatoes

Rosemary Potatoes



A low fat, whole way to eat meat and potatoes! These pork chops are so sweet and satisfying! 

Serves:

Ready In: 
Pork Chops: A Few Hours to Marinate, 15 Min. to Bake

Roasted Potatoes: 45 Min. 

Wine Pairing: Sauvignon Blanc


Honey Garlic Pork Chops:

What You Will Need:

  • Four pork loin chops, boneless, trimmed of fat, about 4 oz each
  • 1/4 c honey
  • 3 t low sodium soy sauce
  • 6 cloves garlic, minced
  • 1 T EVOO

Method:

  1. In a small dish, whisk together honey, soy and garlic.
  2. Marinate: In a dish, coat pork chops with most of the sauce (saving some for drizzling on top when they are done).  
  3. Cover and put in fridge for a few hours or if you don't have the time, a half an hour will do!
  4. Heat a skillet on medium high. Heat EVOO. 
  5. Place pork chops on skillet and cook for about 6 minutes on one side and 4 minutes on the other. Make sure meat is white all the way through. 
  6. Drizzle the rest of the sauce on top. 

Roasted Rosemary Potatoes:

What You Will Need:

  • Five Small white potatoes, peeled, washed and sliced
  • 1 T EVOO
  • 1 T Rosemary
  • Pepper to taste

Method:

  1. Preheat oven to 400 F.
  2. Coat potatoes in EVOO and sprinkle on spices (I do this in a bowl and mix with my hands).
  3. Lay on a baking sheet on parchment paper.
  4. Bake for about 30 min or until crispy.



Serve with Cottage Cheese and Spinach Salad!
