Taco Tuesday! Fresh Fish Soft Tacos with Homemade Creamy Lemon-Lime Cole Slaw and Homemade Chunky Salsa



Who doesn't LOVE fresh fish tacos? I try to do Taco Tuesday every week and I am always looking for a new, tasty, healthy variation to change it up. This creamy lemon lime cole slaw does the trick! These soft tacos are super SIMPLE (yes, the fish too!) and CHEAP to throw together!

Some Mexican dishes can be full of fatty ingredients- not this dish! The fish (baked with only EVOO and spices) offers a healthy serving of lean protein, the salsa and cole slaw are homemade with only fresh, whole ingredients (and the creaminess in the cole slaw offers a little bit of fat- we need some fat in our diet!), the black beans are full of fiber and protein and the whole wheat tortillas (make sure the FIRST ingredient reads 'whole grain') are a healthy serving of whole grains. I buy organic ingredients whenever possible. Totally satisfying and delicious!

Ready In: 40 min.
Wine Pairing: Chilled glass of Chardonnay (Or a Corona?!) 

What You Will Need:

  • 1 Pound of a Fresh White Boneless Fish (Such as Halibut, Talapia or Mahi Mahi) 
  • Splash of EVOO
  • Pinch of Kosher Salt and Fresh Pepper 
  • 3 Roma Tomatoes
  • 1/2 Red Onion 
  • Bunch of Cilantro
  • 1 teaspoon Honey
  • 1/2 Green Cabbage
  • 1 Tablespoons Low-fat Sour Cream
  • 1 Tablespoon Low-fat Mayo
  • 1 Lime (sliced)
  • 1 slice of Lemon
  • 1 Low Sodium Black Beans (Washed and Rinsed)
  • 8 Whole Wheat Tortillas
  • Optional: Ancho Chili Powder, Sliced Avocado


Method:


Preparing the Fish:

  • Preheat oven to 375.
  • Put fish in a baking dish. Rub a little EVOO on the top and bottom. Sprinkle a pinch a Kosher salt and pepper on top. (Add ancho chili powder if you like it hot!)
  • Bake for 25 or until fish is flaky when you poke it with a fork.


Preparing the Salsa:

  • Chop the tomatoes, onion and cilantro. Mix together with spoon. Add honey,  and a pinch of salt and pepper to taste. These's your salsa!


Preparing the Cole Slaw:

  • Add sour cream, mayo, slice of lemon, a few slices of lime (to your liking), and a pinch of salt and pepper. There's your creamy lemon-lime cole slaw!


Finally:

  • Wash and since the beans.
  • Slice fresh avocado if you would like!
  • Set everything out and start heating the tortillas on the stove. Let family and friends help themselves!! Be sure to set out fresh lime to squeeze on top of the tacos!
