Chicken, Kale and Wild Rice Soup

Ingredients:

-1 1/2-2 lbs of chicken, raw
-Bunch of kale, chunked up to bite-sized pieces
-1 cup wild rice, uncooked (quinoa might be great too!)
-Onion, chopped
-Carrots, chopped
-About 6 cups of chicken stock
-Bunch of thyme
-S&P

Method:

Place chicken on bottom of slow cooker. Top with the rest of ingredients and then pour over stock. Slow cook on high for 3 1/2 hrs or low for 6-7 hrs. Shred chicken in soup. I served it with garlic and rosemary bread!

Total easy, delish meal!
